Ingredients

  • 2 ounces gin
  • 1 pasteurized egg white
  • 3 drops orange flower water
  • 1/2 ounce cream
  • 1/2 ounce fresh lemon juice
  • 1/2 ounce fresh lime juice
  • 1/2 ounce simple syrup
  • Ice cubes
  • Splash of soda water
  • 1 strawberry or a lime wheel
  • Grating of fresh nutmeg (optional)

Instructions

  1. If hand-shaking, mix gin, egg white, orange flower water, cream, lemon juice, lime juice, and simple syrup in a cocktail shaker.
  2. Shake vigorously for about a minute, then add 4-5 ice cubes and continue shaking until well mixed.
  3. Strain the drink into a chilled cocktail glass.
  4. Pour a splash of soda water into the shaker to dislodge any remaining foam and pour it into the top of the fizz.
  5. Use a spoon to transfer all of the foam to the glass.
  6. If using a blender, blend gin, egg white, orange flower water, cream, lemon juice, and lime juice on high for 30 seconds.
  7. Add 4 cubes of ice and blend on high until a good foam forms, then pour into a chilled cocktail glass.
  8. Pour a splash of soda water back into the blender to dislodge any remaining foam and pour it into the top of the fizz.
  9. Use a spoon to transfer all of the foam to the glass.
  10. Garnish the rim of the glass with a sliced strawberry or lime wheel.
