Ingredients
- 1 (14 oz.) can dairy-free sweetened condensed milk
- 1 (15 oz.) can cream of coconut
- 1 (13.5 oz.) can coconut milk (regular, full fat)
- 3/4 tsp ground cinnamon
- 1/2 tsp vanilla extract
- 1/4 tsp ground nutmeg
- 1 1/2 oz dark rum
- 1/2 to 1 cup unsweetened dairy-free milk beverage
Instructions
- In a blender, combine dairy-free sweetened condensed milk, cream of coconut, coconut milk, ground cinnamon, vanilla extract, and ground nutmeg. Blend until smooth, approximately 1 minute.
- Transfer the mixture to a pitcher or large bowl and stir in the dark rum and dairy-free milk beverage.
- Cover and refrigerate for several hours before serving. It can be stored in an airtight container in the refrigerator for up to a month. If the mixture sets up when chilled, whisk it before serving.
- Pour or ladle approximately 1/2 cup of the prepared dairy-free coco rum delight into a small cocktail glass. Optionally, sprinkle with a pinch of ground cinnamon.
