Ingredients

  • 1 (14 oz.) can dairy-free sweetened condensed milk
  • 1 (15 oz.) can cream of coconut
  • 1 (13.5 oz.) can coconut milk (regular, full fat)
  • 3/4 tsp ground cinnamon
  • 1/2 tsp vanilla extract
  • 1/4 tsp ground nutmeg
  • 1 1/2 oz dark rum
  • 1/2 to 1 cup unsweetened dairy-free milk beverage

Instructions

  1. In a blender, combine dairy-free sweetened condensed milk, cream of coconut, coconut milk, ground cinnamon, vanilla extract, and ground nutmeg. Blend until smooth, approximately 1 minute.
  2. Transfer the mixture to a pitcher or large bowl and stir in the dark rum and dairy-free milk beverage.
  3. Cover and refrigerate for several hours before serving. It can be stored in an airtight container in the refrigerator for up to a month. If the mixture sets up when chilled, whisk it before serving.
  4. Pour or ladle approximately 1/2 cup of the prepared dairy-free coco rum delight into a small cocktail glass. Optionally, sprinkle with a pinch of ground cinnamon.
