Ingredients

  • 1/2 cup white rum
  • 1 cup sweetened condensed milk
  • 1 1/4 cups evaporated milk
  • 1/2 cup coconut milk
  • A dash of vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg (freshly grated)
  • Zest of half a lime

Instructions

  1. In a large bowl, mix the coconut milk and rum, cover, and let steep at room temperature for 2 hours.
  2. In a heavy-bottomed saucepan, combine the evaporated milk, cinnamon, nutmeg, and lime zest. Infuse over low heat for 20 minutes without boiling.
  3. Remove the pan from the heat and stir in the rum-infused coconut milk, then add the vanilla extract. Gradually pour in the sweetened condensed milk while whisking continuously.
  4. Allow the mixture to stand for at least 4 hours in a cool, dark place to enhance the flavors.
  5. Strain through a fine sieve and serve well-chilled, with or without crushed ice.
