Ingredients

  • 1 1/2 oz balsamic vinegar
  • 1 1/2 oz coarsely ground espresso coffee
  • 1 1/2 tbsp agave syrup
  • 1 1/2 tbsp maple syrup
  • 4 oz chilled sparkling water
  • Ice

Instructions

  1. In a medium bowl, mix the balsamic vinegar and coarsely ground espresso coffee with 1/4 cup of water.
  2. Cover the bowl with plastic wrap and let it sit at room temperature for at least 6 hours or overnight.
  3. Pour the liquid through a fine sieve lined with cheesecloth into another bowl.
  4. Stir in the agave and maple syrups.
  5. Store the coffee shrub in an airtight glass container in the refrigerator for up to 4 weeks.
  6. To serve, fill a chilled 12-oz. glass with ice.
  7. Add 1 1/2 tablespoons of coffee shrub to the glass.
  8. Top with 4 ounces of sparkling water and stir to combine.
