Ingredients

  • 2/3 cup coconut milk
  • 1 tablespoon granulated sugar
  • 1/8 teaspoon vanilla extract
  • 1 large egg yolk
  • 1/8 teaspoon ground cinnamon
  • Pinch of nutmeg
  • 1 tablespoon hazelnut liqueur
  • 1 large egg white (optional)
  • 1 teaspoon sweetened flaked coconut (for garnish, optional)
  • 1/2 teaspoon cinnamon sugar (for garnish, optional)

Instructions

  1. In a medium saucepan, heat the coconut milk, 1/6 cup of the sugar, and vanilla over medium low heat until steaming and just beginning to simmer.
  2. In a separate bowl, whisk the remaining sugar into the egg yolk until smooth and pale in color.
  3. Gradually pour a small amount of the warm coconut milk into the egg yolk mixture, whisking continuously.
  4. Pour the egg yolk mixture back into the saucepan with the coconut milk and continue to cook over medium low heat, stirring constantly until slightly thickened.
  5. Stir in the cinnamon, nutmeg, and hazelnut liqueur, then place the saucepan into an ice bath to cool the eggnog.
  6. Refrigerate the eggnog for at least 2 hours or overnight.
  7. If using egg whites, beat the egg white with a small amount of sugar until frothy, then gently fold into the cooled eggnog.
  8. Serve the eggnog garnished with flaked coconut and a sprinkling of cinnamon sugar.
