Ingredients
- 2/3 cup coconut milk
- 1 tablespoon granulated sugar
- 1/8 teaspoon vanilla extract
- 1 large egg yolk
- 1/8 teaspoon ground cinnamon
- Pinch of nutmeg
- 1 tablespoon hazelnut liqueur
- 1 large egg white (optional)
- 1 teaspoon sweetened flaked coconut (for garnish, optional)
- 1/2 teaspoon cinnamon sugar (for garnish, optional)
Instructions
- In a medium saucepan, heat the coconut milk, 1/6 cup of the sugar, and vanilla over medium low heat until steaming and just beginning to simmer.
- In a separate bowl, whisk the remaining sugar into the egg yolk until smooth and pale in color.
- Gradually pour a small amount of the warm coconut milk into the egg yolk mixture, whisking continuously.
- Pour the egg yolk mixture back into the saucepan with the coconut milk and continue to cook over medium low heat, stirring constantly until slightly thickened.
- Stir in the cinnamon, nutmeg, and hazelnut liqueur, then place the saucepan into an ice bath to cool the eggnog.
- Refrigerate the eggnog for at least 2 hours or overnight.
- If using egg whites, beat the egg white with a small amount of sugar until frothy, then gently fold into the cooled eggnog.
- Serve the eggnog garnished with flaked coconut and a sprinkling of cinnamon sugar.
