Ingredients
- 1 cup full-fat canned coconut milk
- 1 egg yolk
- 1 tablespoon maple syrup
- 1/4 teaspoon grated nutmeg
- 1/8 teaspoon ground cinnamon
- 1/4 teaspoon vanilla extract
- 1/2 - 1 tablespoon bourbon (optional)
Instructions
- In a blender, mix the egg yolk and maple syrup until light and fluffy.
- Heat the coconut milk, nutmeg, and cinnamon in a saucepan until simmering, whisking often.
- Slowly pour the hot coconut milk into the egg mixture while blending or mixing.
- Transfer the mixture back to the saucepan and heat until thick, stirring constantly.
- Remove from heat, stir in vanilla extract and optional bourbon.
- Cool to room temperature, then refrigerate until chilled.
- Serve with a dash of nutmeg.
