Ingredients

  • 1/2 cup full-fat canned coconut milk
  • 1 egg yolk
  • 1 tablespoon maple syrup
  • 1/8 teaspoon grated nutmeg
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon vanilla extract
  • 1/2 - 1 tablespoon bourbon (optional)

Instructions

  1. In a blender, blend the egg yolk and maple syrup until fluffy.
  2. Heat the coconut milk, nutmeg, and cinnamon in a saucepan until simmering.
  3. Slowly stream the hot coconut milk into the egg mixture while blending on low speed.
  4. Return the mixture to the saucepan, heat, and stir constantly until thickened.
  5. Remove from heat, stir in vanilla extract and bourbon if desired.
  6. Cool to room temperature, then refrigerate until chilled.
  7. Serve with a sprinkle of nutmeg.
