Ingredients
- 1/2 cup full-fat canned coconut milk
- 1 egg yolk
- 1 tablespoon maple syrup
- 1/8 teaspoon grated nutmeg
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon vanilla extract
- 1/2 - 1 tablespoon bourbon (optional)
Instructions
- In a blender, blend the egg yolk and maple syrup until fluffy.
- Heat the coconut milk, nutmeg, and cinnamon in a saucepan until simmering.
- Slowly stream the hot coconut milk into the egg mixture while blending on low speed.
- Return the mixture to the saucepan, heat, and stir constantly until thickened.
- Remove from heat, stir in vanilla extract and bourbon if desired.
- Cool to room temperature, then refrigerate until chilled.
- Serve with a sprinkle of nutmeg.
