Ingredients

  • 1/2 cup full-fat canned coconut milk
  • 1 egg yolk
  • 1 tablespoon maple syrup
  • 1/8 teaspoon grated nutmeg
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon vanilla extract
  • 1/2 - 1 tablespoon bourbon (optional)

Instructions

  1. In a blender, blend the egg yolk and maple syrup until light and fluffy.
  2. In a saucepan, heat the coconut milk, nutmeg, and cinnamon until simmering, whisking often.
  3. Slowly stream the hot coconut milk into the egg mixture while blending or mixing with a hand-held mixer.
  4. Transfer the mixture back to the saucepan and heat until thick, stirring constantly.
  5. Remove from heat, stir in the vanilla extract and optional bourbon.
  6. Allow the eggnog to cool to room temperature, then refrigerate to chill completely.
  7. Serve with an additional grating of nutmeg if desired.
