Ingredients
- 1/2 cup full-fat canned coconut milk
- 1 egg yolk
- 1 tablespoon maple syrup
- 1/8 teaspoon grated nutmeg
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon vanilla extract
- 1/2 - 1 tablespoon bourbon (optional)
Instructions
- In a blender, blend the egg yolk and maple syrup until light and fluffy.
- In a saucepan, heat the coconut milk, nutmeg, and cinnamon until simmering, whisking often.
- Slowly stream the hot coconut milk into the egg mixture while blending or mixing with a hand-held mixer.
- Transfer the mixture back to the saucepan and heat until thick, stirring constantly.
- Remove from heat, stir in the vanilla extract and optional bourbon.
- Allow the eggnog to cool to room temperature, then refrigerate to chill completely.
- Serve with an additional grating of nutmeg if desired.
