Ingredients

  • 1 tbsp Martell cognac
  • 0.50 tbsp Campari
  • 0.50 tbsp grapefruit and lemon thyme sherbet (see below)
  • 0.25 tbsp sugar syrup
  • 100ml champagne (or sparkling wine)
  • Fresh lemon thyme sprig for garnish
  • For the grapefruit and lemon thyme sherbet
  • Pared strip of grapefruit zest
  • 1.50 tbsp grapefruit juice
  • 2 tsp sugar
  • Small handful of fresh lemon thyme sprigs

Instructions

  1. In a small bowl, mix the grapefruit zest, sugar, and lemon thyme, and let it sit for 45 minutes or longer.
  2. Add the grapefruit juice and stir until the sugar dissolves, then strain into a small bowl.
  3. Fill a glass with ice and pour in the cognac, Campari, sherbet, and sugar syrup. Stir well.
  4. Strain the mixture evenly into a champagne coupe or flute.
  5. Top up the glass with champagne or sparkling wine.
  6. Garnish with a fresh sprig of lemon thyme and serve.
