Ingredients
- 1 tbsp Martell cognac
- 0.50 tbsp Campari
- 0.50 tbsp grapefruit and lemon thyme sherbet (see below)
- 0.25 tbsp sugar syrup
- 100ml champagne (or sparkling wine)
- Fresh lemon thyme sprig for garnish
- For the grapefruit and lemon thyme sherbet
- Pared strip of grapefruit zest
- 1.50 tbsp grapefruit juice
- 2 tsp sugar
- Small handful of fresh lemon thyme sprigs
Instructions
- In a small bowl, mix the grapefruit zest, sugar, and lemon thyme, and let it sit for 45 minutes or longer.
- Add the grapefruit juice and stir until the sugar dissolves, then strain into a small bowl.
- Fill a glass with ice and pour in the cognac, Campari, sherbet, and sugar syrup. Stir well.
- Strain the mixture evenly into a champagne coupe or flute.
- Top up the glass with champagne or sparkling wine.
- Garnish with a fresh sprig of lemon thyme and serve.
