Ingredients
- 1 cup whole milk
- 1/2 cup heavy cream
- 1 cinnamon stick
- 1/2 vanilla bean, split in half lengthwise
- 2 eggs, separated, at room temperature
- 3 tablespoons white sugar
- 2 tablespoons rum
- 1 tablespoon brandy
- A pinch of nutmeg (for garnish)
Instructions
- In a medium saucepan, combine the milk, cream, cinnamon, and vanilla over medium heat, and bring to a gentle simmer.
- In a stand mixer, beat the egg yolks until doubled in size, then slowly pour in a third of the hot milk mixture.
- Return the egg mixture to the saucepan with the remaining milk and spices, and cook gently while whisking constantly until it reaches 176°F (80°C).
- Strain the mixture into a jug and refrigerate for 2-3 hours.
- In a small pot, heat the sugar with water until it reaches 230°F (110°C) to make a syrup.
- In a clean stand mixer bowl, beat the egg whites until soft peaks form, then gradually pour in the hot sugar syrup and continue to beat until stiff peaks form.
- Gently fold the egg white mixture into the chilled eggnog, followed by the rum and brandy. Refrigerate until ready to serve.
- Before serving, whisk the eggnog and garnish with nutmeg.
