Ingredients

  • 3.20 oz Caramilk chocolate
  • 1/2 cup heavy cream + extra for topping
  • 1/2 cup whole milk
  • 4 egg yolks
  • 0.18 oz vanilla extract
  • 2 tbsp granulated sugar
  • 2 tbsp spiced rum
  • Ground nutmeg, for garnish

Instructions

  1. Use a vegetable peeler to shave 1 tablespoon of Caramilk chocolate and finely chop the rest.
  2. In a saucepan over low heat, combine the chopped chocolate, cream, and milk. Stir until the chocolate melts and the mixture just comes to a boil, then remove from heat.
  3. In a large bowl, whisk the egg yolks, vanilla, and sugar until pale and thickened. Gradually whisk in the hot cream mixture.
  4. Return the mixture to the saucepan over medium-low heat. Stir constantly for 8-10 minutes until slightly thickened (it should coat the back of a spoon). Do not let it boil. Stir in the rum.
  5. Divide the mixture between two heatproof serving glasses. Top with extra whipped cream, and sprinkle with chocolate shavings and nutmeg.
