Ingredients

  • 1 cup calamansi juice (or 3/4 cup lemon juice and 1/4 cup orange juice)
  • 1 cup sugar
  • 1/3 cup water
  • 2 ounces club soda
  • 1 ounce gin
  • Candied lime or lemon for garnish

Instructions

  1. In a small saucepan, combine calamansi juice (or lemon juice and orange juice), sugar, and water.
  2. Bring to a simmer over medium-low heat, stirring occasionally, and cook for 5 minutes.
  3. Remove from heat and let the syrup cool.
  4. Transfer the syrup to a lidded jar and refrigerate until chilled, about 30 minutes to 1 week.
  5. To prepare the cocktail, fill a low-ball glass with ice.
  6. Add 2 ounces of calamansi syrup, club soda, and gin to the glass, then stir.
  7. Garnish with candied lime or lemon, if desired.
