Ingredients

  • 2 tablespoons salted butter (softened)
  • 1 tablespoon powdered sugar
  • 1 tablespoon light brown sugar (packed)
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon rum extract (or rum emulsion)
  • 1/4 cup vanilla ice cream (softened)
  • 1 cup boiling water
  • cinnamon stick for garnish (optional)

Instructions

  1. In a stand mixer or using a hand mixer and a large bowl, mix softened butter, powdered sugar, packed light brown sugar, ground cinnamon, and ground nutmeg on medium-high speed until fluffy, about 3-5 minutes.
  2. Turn off the mixer and add rum extract and vanilla ice cream to the bowl, then mix on medium speed until the ingredients are combined with only a few clumps, about another 3-5 minutes.
  3. Transfer the buttered rum mixture to a large sealable container and freeze until firm, about 2-4 hours.
  4. When ready to serve, boil 1 cup of water. Scoop approximately 1/2 cup of the buttered rum mixture into a glass.
  5. Pour the boiling water over the mixture, then stir well.
  6. Garnish the drink with a cinnamon stick for added flavor and as a stirring implement (optional).
  7. Serve as desired.
