Ingredients

  • 2 tbsp baking stevia or sugar
  • 1/4 cup water
  • 1/2 cup frozen blueberries
  • 1 1/2 oz white rum
  • Handful of mint leaves
  • 1/2 cup sparkling water

Instructions

  1. In a small medium saucepan, combine baking stevia, water, and frozen blueberries. Bring to a boil, then let simmer for 10 minutes, mashing the blueberries as they cook.
  2. Puree the cooked blueberry mixture in a blender until smooth. Let it cool in a container for a few hours or chill in the freezer for 10-15 minutes.
  3. When ready to serve, add mint leaves and rum to a highball glass with ice.
  4. Pour 2 ounces of the blueberry simple syrup into the glass.
  5. Top with sparkling water and serve immediately.
  6. Garnish with mint and extra blueberries, if desired.
