Ingredients
- 1 tablespoon baking stevia or sugar
- 1/4 cup water
- 1/2 cup frozen blueberries
- 1 1/2 oz white rum
- Handful of mint leaves
- 1/2 cup sparkling water, such as La Croix
- Ice
Instructions
- In a small medium saucepan, combine the baking stevia, 1/4 cup water, and the frozen blueberries.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 10 minutes.
- Mash the blueberries with a fork or spoon as it cooks to break them down.
- Once the mixture has cooked down, transfer it to a blender and puree until smooth.
- Allow the blueberry syrup to cool for a few hours or place it in the freezer for 10-15 minutes to chill, but not freeze.
- When ready to serve, place a few mint leaves and 1 1/2 ounces of rum in a highball glass with ice.
- Add 2 ounces of the blueberry simple syrup to the glass.
- Top with sparkling water and serve immediately.
- Garnish with mint and extra blueberries, if desired.
