Ingredients

  • 1 tablespoon baking stevia or sugar
  • 1/4 cup water
  • 1/2 cup frozen blueberries
  • 1 1/2 oz white rum
  • Handful of mint leaves
  • 1/2 cup sparkling water, such as La Croix
  • Ice

Instructions

  1. In a small medium saucepan, combine the baking stevia, 1/4 cup water, and the frozen blueberries.
  2. Bring the mixture to a boil, then reduce the heat and let it simmer for 10 minutes.
  3. Mash the blueberries with a fork or spoon as it cooks to break them down.
  4. Once the mixture has cooked down, transfer it to a blender and puree until smooth.
  5. Allow the blueberry syrup to cool for a few hours or place it in the freezer for 10-15 minutes to chill, but not freeze.
  6. When ready to serve, place a few mint leaves and 1 1/2 ounces of rum in a highball glass with ice.
  7. Add 2 ounces of the blueberry simple syrup to the glass.
  8. Top with sparkling water and serve immediately.
  9. Garnish with mint and extra blueberries, if desired.
