Ingredients

  • 2 tablespoons baking stevia or sugar
  • 1/4 cup water
  • 1/2 cup frozen blueberries
  • 1 1/2 oz white rum
  • Small bunch of mint leaves
  • 1 cup sparkling water, such as La Croix
  • Ice

Instructions

  1. In a small saucepan, combine baking stevia, water, and frozen blueberries. Bring to a boil, then simmer for 10 minutes, mashing the blueberries as they cook.
  2. Transfer the mixture to a blender and puree until smooth. Allow it to cool or place in the freezer for 10-15 minutes to chill, but not freeze.
  3. When ready to serve, add mint leaves and rum to a highball glass with ice.
  4. Pour 2 ounces of the blueberry simple syrup into the glass.
  5. Top with sparkling water and stir gently.
  6. Garnish with mint leaves and extra blueberries, if desired.
