Ingredients
- 2 tablespoons baking stevia or sugar
- 1/4 cup water
- 1/2 cup frozen blueberries
- 1 1/2 oz white rum
- Small bunch of mint leaves
- 1 cup sparkling water, such as La Croix
- Ice
Instructions
- In a small saucepan, combine baking stevia, water, and frozen blueberries. Bring to a boil, then simmer for 10 minutes, mashing the blueberries as they cook.
- Transfer the mixture to a blender and puree until smooth. Allow it to cool or place in the freezer for 10-15 minutes to chill, but not freeze.
- When ready to serve, add mint leaves and rum to a highball glass with ice.
- Pour 2 ounces of the blueberry simple syrup into the glass.
- Top with sparkling water and stir gently.
- Garnish with mint leaves and extra blueberries, if desired.
