Ingredients
- 3 tablespoons blackberries
- 1/4 cup water
- 1/4 cup sugar
- 2 ounces gin
- 1/4 cup champagne
- 1 sprig of thyme
- 1/4 cup ice
- gold baking sugar for rimming
Instructions
- In a small saucepan, bring blackberries, water, and sugar to a boil. Simmer for 5 minutes until the blackberries are soft and the syrup turns pink/red.
- Remove from heat, strain the blackberries, and let the syrup cool.
- Rim the champagne glass with gold baking sugar using a small amount of butter on the rim.
- Add gin and blackberry syrup to the glass, then drop in two blackberries.
- Fill the glass with champagne and top with a sprig of thyme.
