Ingredients

  • 1/2 cup frozen raspberries
  • 1/4 cup fresh or frozen strawberries
  • 1 tbsp sugar
  • 1/2 tsp honey
  • 2 tbsp half and half
  • 1/4 tsp vanilla extract
  • 4 oz sparkling champagne

Instructions

  1. In a saucepan, heat the raspberries and strawberries until softened and soupy, about 8-10 minutes.
  2. Add sugar and honey to sweeten the berries, then remove from heat and puree the mixture in a blender.
  3. Strain the pureed berries through a fine mesh strainer into a measuring cup, tapping gently to separate the liquid from the seeds.
  4. Pour some of the half & half through the strainer to allow more juice from the berries to come through, then add the remainder of the cream and stir to combine.
  5. Stir in the vanilla extract and pour the berry mixture into an ice cube tray to freeze.
  6. When ready to serve, add the berry cubes to a champagne glass and pour the sparkling champagne over the cubes. The cubes will melt, creating a delicious mimosa.
