Berry Sparkle Mimosa
A delightful twist on the classic mimosa, this Berry Sparkle Mimosa combines a luscious berry puree with creamy half & half, frozen into cubes and added to sparkling champagne for a refreshing and visually stunning cocktail.
Ingredients
- 1/2 cup frozen raspberries
- 1/4 cup fresh or frozen strawberries
- 1 tbsp sugar
- 1/2 tsp honey
- 2 tbsp half and half
- 1/4 tsp vanilla extract
- 4 oz sparkling champagne
Instructions
- In a saucepan, heat the raspberries and strawberries until softened and soupy, about 8-10 minutes.
- Add sugar and honey to sweeten the berries, then remove from heat and puree the mixture in a blender.
- Strain the pureed berries through a fine mesh strainer into a measuring cup, tapping gently to separate the liquid from the seeds.
- Pour some of the half & half through the strainer to allow more juice from the berries to come through, then add the remainder of the cream and stir to combine.
- Stir in the vanilla extract and pour the berry mixture into an ice cube tray to freeze.
- When ready to serve, add the berry cubes to a champagne glass and pour the sparkling champagne over the cubes. The cubes will melt, creating a delicious mimosa.
