Berry Mint Fizz

A refreshing, non-alcoholic blackberry mint mocktail that's perfect for staying cool on hot days. This low-carb beverage can also be made by substituting Monkfruit sweetener for sugar. The blackberry syrup adds a burst of fruity flavor, complemented by the zing of fresh lime and the coolness of mint.

Ingredients

  • 1/8 cup fresh or frozen blackberries
  • 1 tablespoon sugar (or Monkfruit sweetener)
  • 1/8 cup water
  • 1 mint leaf
  • Juice of 1/2 lime
  • Club soda
  • Ice

Instructions

  1. In a small saucepan, combine the blackberries, sugar (or sweetener), and water. Bring to a boil, then simmer for 10 minutes. Remove from heat and let it cool to room temperature.
  2. Pour the blackberry syrup through a fine mesh strainer into a glass container. This can be stored in the fridge for a couple of days.
  3. To make one drink, pour 3 tablespoons of the blackberry simple syrup into the bottom of a shaker. Add the lime juice and a mint leaf. Muddle the mixture together with a muddler or the handle of a wooden spoon.
  4. Add a handful of ice to the shaker and give the mix a shake.
  5. Fill a high ball glass with ice and pour the contents of the shaker in. Top with club soda and enjoy!
