Ingredients

  • 1/8 cup fresh or frozen blackberries
  • 1 tablespoon sugar (or Monkfruit sweetener)
  • 1/8 cup water
  • 1 mint leaf
  • Juice of 1/2 lime
  • Club soda
  • Ice

Instructions

  1. In a small saucepan, combine the blackberries, sugar, and water. Bring to a boil, then simmer for 10 minutes. Remove from heat and let the mixture cool to room temperature.
  2. Pour the blackberry syrup through a fine mesh strainer and into a glass container. It can be refrigerated for a couple of days at this point.
  3. To make one drink, pour 3 tablespoons of the blackberry simple syrup into the bottom of a shaker. Add in the lime juice and a mint leaf. Muddle the mixture together.
  4. Add a handful of ice to the shaker and give the mix a shake.
  5. Fill a highball glass with ice and pour the contents of the shaker in.
  6. Top with club soda and enjoy!
