Ingredients

  • 5 1/2 cups water
  • 3/4 cup granulated sugar
  • 3 inches long piece fresh ginger, peeled, thinly sliced
  • 1 lemon, peeled with vegetable peeler, juiced
  • 1/4 teaspoon sea salt
  • 1/2 cup fresh raspberries
  • 1/2 cup fresh blackberries
  • 1/2 cup fresh blueberries
  • 3 fl oz dark rum
  • Approx. 6 fl oz ice cubes
  • 6-8 fresh mint leaves

Instructions

  1. Start by preparing the ginger syrup. In a medium heavy-based saucepan, combine the water, granulated sugar, ginger, lemon peel, and juice, and salt. Bring to a boil over high heat, then reduce the heat and simmer for 5 minutes until the syrup thickens slightly and is infused with the ginger and lemon.
  2. Set the syrup aside at room temperature to cool. Once cooled, strain the syrup into a small bowl and discard the solids. The syrup can be covered and refrigerated for up to 1 week.
  3. To prepare the cocktail, in a blender, combine the berries, dark rum, and 1 cup of ginger syrup, reserving the remaining syrup for another use. Blend on high speed for 15 seconds until well blended.
  4. Fill a highball glass halfway with ice. Add the berry mixture and mint, and stir well to allow some ice to melt into the berry mixture.
  5. Pour the cocktail into the glass and serve immediately.
