Ingredients
- 5 1/2 cups water
- 3/4 cup granulated sugar
- 3 inches long piece fresh ginger, peeled, thinly sliced
- 1 lemon, peeled with vegetable peeler, juiced
- 1/4 teaspoon sea salt
- 1/2 cup fresh raspberries
- 1/2 cup fresh blackberries
- 1/2 cup fresh blueberries
- 3 fl oz dark rum
- Approx. 6 fl oz ice cubes
- 6-8 fresh mint leaves
Instructions
- Start by preparing the ginger syrup. In a medium heavy-based saucepan, combine the water, granulated sugar, ginger, lemon peel, and juice, and salt. Bring to a boil over high heat, then reduce the heat and simmer for 5 minutes until the syrup thickens slightly and is infused with the ginger and lemon.
- Set the syrup aside at room temperature to cool. Once cooled, strain the syrup into a small bowl and discard the solids. The syrup can be covered and refrigerated for up to 1 week.
- To prepare the cocktail, in a blender, combine the berries, dark rum, and 1 cup of ginger syrup, reserving the remaining syrup for another use. Blend on high speed for 15 seconds until well blended.
- Fill a highball glass halfway with ice. Add the berry mixture and mint, and stir well to allow some ice to melt into the berry mixture.
- Pour the cocktail into the glass and serve immediately.
