Ingredients

  • 3 oz. Cava
  • 1.50 oz. Vodka
  • 1 scoop Lemon Sorbet
  • 1.25g Special Ingredients Lecithin Powder
  • 1/2 cup Apple Juice

Instructions

  1. Place the glass in the freezer for 30 minutes to chill.
  2. In a bowl, mix the apple juice and Lecithin with a hand blender to create a layer of foam, ensuring the blender is partially above the liquid to incorporate air. Use a bowl with high edges to prevent splashing.
  3. In a mixing bowl, blend the Cava, Vodka, and Lemon Sorbet with the hand blender.
  4. If needed, use a long spoon to fill the glass with the Cava mixture, leaving space for the foam.
  5. Gently spoon the apple juice foam onto the Cava mixture, creating a beautiful high peak of foam or garnish with a mint leaf.
