Ingredients

  • 3 oz Cava
  • 1.50 oz Vodka
  • 2 tbsp Lemon Sorbet
  • 2 tbsp Apple Juice
  • 1/8 tsp Lecithin Powder

Instructions

  1. Prepare by chilling the serving glass in the freezer for at least 30 minutes before serving.
  2. In a bowl, combine the apple juice and lecithin powder, then use a hand blender to create a layer of foam, ensuring the blender protrudes above the liquid to mix in air.
  3. In a separate mixing bowl, blend the Cava, vodka, and lemon sorbet with a hand blender until smooth.
  4. Pour the Cava mixture into the chilled glass, leaving about 1 cm of space from the rim.
  5. Gently spoon the apple juice foam on top of the Cava mixture, creating a beautiful, lofty foam. Optionally, garnish with a mint leaf.
