Ingredients

  • 2 ounces pisco
  • 1 ounce freshly squeezed lime juice
  • 1/2 ounce simple syrup
  • 1 egg white

Instructions

  1. In a shaker, combine pisco, lime juice, simple syrup, and egg white.
  2. Dry-shake vigorously without ice.
  3. Add ice to the shaker and shake again until well-chilled.
  4. Strain the mixture into a chilled Nick & Nora glass or a rocks glass over fresh ice.
  5. Garnish with 3 to 5 drops of Angostura bitters.
  6. Using a straw, toothpick, or similar implement, swirl the bitters into a simple design, if desired.
